Cappchino Cheeaecake

Waiter, waiter id like to order a cappuccino. Not just any ordinary cappuccino, a yummy large slice of cappuccino cheesecake.

I have to admit my cappuccino cheesecake is one of the best things I make, because it is so sinly. With the addition of a cookie base, because a cheesecake without a cookie crust is a liar, and not a proper cheesecake. You can't be afraid to put all the bad stuff in there, because that's what makes it so "good for you." Honestly if someone didn't stop me, I could eat about 5 slices of this or just shove my whole face into it and work my way through, which believe me I was tempted to do.
Cappuccino Cheesecake:
Ingredients:
* 2 and a half whole containers of chocolate digestives (you can uses graham crackers, but the chocolate adds a nice rich flavor to the cookie crust)
*8 tablespoons of melted butter
*1 1/2 cups of granulated sugar
*1/2 cups of heavy cream (softened)
*4 tablespoons if instant espresso/coffee ( I used Starbucks insta packets)
*1 1/2 teaspoons of vanilla extract
*4- 8 ounce packages of cream cheese
* 4 large eggs
* 2 tablespoons all purpose flour
*Chocolate to shave over the top (I used a bar of dark chocolate
* the rest of the whipping cream to make whipped cream for the top

Directions:
*Preheat oven to 350 degrees
*Crush up cookies in plastic bag
*Melt butter in pan on the stove, once melted add the crushed cookies and mix together
*Take out spring form pan and smush cookie mixture to the bottom of the pan
*Put in oven and bake for 10 minutes
*In the meantime combine the softened cream cheese and sugar
*In a Pyrex measuring cup, put the 1/2 cups of whipping cream, vanilla, espresso/coffee, and mix together
*Add the 4 eggs one at a time to the cream cheese sugar mixture
*Then add the 2 tablespoons of flour along with the heavy cream espresso mixture
* When all mixed together out over the cooled cookie crust and bake in the oven for about 1 hour and 10 minutes depending on your oven
(Take out only if it doesn't jiggle when you shake the sides)
*Take out to cool, once cooled, place in fridge for about 3 hours or over night
* Then dress with homemade whipped cream and shaved chocolate

Samoa Donuts

Girl Scout donuts come and get your donuts!

Yum! The recipe I used for the base of these baked donuts was from Back for Seconds, they foods she makes always looks delicious and always work out the way there supposed too.  For the Samoa girl scout cookie like topping I came up with my own little recipe, or ooey gooey coconut caramel goodness.

Ingredients:

Donuts
*1 1/2 cups of all purpose flour
*1/2 cup of brown sugar (packed)
*1 1/2 teaspoon of baking powder
*1/2 teaspoon baking soda
*1 dash of nutmeg
*1 dash of cinnamon
*3 tablespoons of unsalted butter (melted)
*1/4 cup of milk
*2/3 cups of plain Greek yogurt
*1 1/2 teaspoons of vanilla extract

Samoa Topping
*About 20 Kraft caramels
*Tablespoon of heavy cream
*About 1/2 cup of toasted coconut
*About 1/2 cup of semi sweet chocolate chips (melted)

Directions:

Donuts
1. Preheat oven to 350
2. In a mixing bowl mix together the egg, milk, yogurt, butter, and vanilla
3. Add all the dry ingredients to that mixture; flour, baking soda, baking powder, brown sugar, nutmeg, and cinnamon
4. Make sure to grease donuts pan well, and fill the donut pan using a piping bag (this is easier then trying to fill the circles with a spoon
5. Bake for about 9 minutes
6. Let them cool before frosting or adding any sort of topping

Samoa Topping
1. Put all 20 caramels into pan unwrapped, and let them melt
2. Add the heavy cream and stir until caramel is melted
3. Put oven to 350 for the coconut, lay coconut out onto pan
4. Bake in oven until golden drown, about 5 minutes, maybe longer depending
5. Take coconut out of oven and add into melted caramel mixture
6. Spread mixture over donuts and drizzle with melted chocolate

Tada you have just made Samoa Donuts! Yummy!
